I know there are cookbooks out there that have recipes from each country in the world, but dividing the world’s culinary traditions by country doesn’t seem like a good way to do it. Is Italian food really that different from food in San Marino? Is food from Ghana really that different from the food in neighboring Togo?
Similarly, giving one or even a handful of representative dishes for a large country may not do justice to the many cultures that may exist in such a vast territory. For example, food in the southeastern United States is very different from food in the west coast of America. Similarly, food in northern China is very different from food in southern China.
I’d like to write a cookbook with a recipe from each culinary culture in the world. Instead of dividing the world’s cuisines by country, I want to divide them by region and culture. That way, the Cajun cooking of Louisiana can be properly distinguished from the barbecue and Tex-Mex cuisine of neighboring Texas.
